In January 2025, Minneapolis business Patisserie 46 registered their first baker/pastry chef apprenticeship. This program is the first culinary apprenticeship registered in Minnesota in the past decade.

Patisserie 46 chose registered apprenticeship as a workforce training model because it is “critical to pass information through experience and literary education,” said program sponsor John Krauss.

Combining on-the-job training and related technical instruction helps Patisserie 46 “create well-trained professionals for the industry as a whole.”

Patisserie 46 recently welcomed its first apprentice and has seen enthusiasm from everyone involved. This program was created with the belief that mentorship and the transfer of knowledge from journeyworker to apprentice is critical for the survival of the trade.

“If we stop promoting learning and teaching, the growth of our profession will be limited,” Krauss said.
